Bahamian Banana Bread

Bananas were introduced to The Bahamas in the early 1600s. They are locally grown and are a part of the local Bahamian diet. We with codfish and potato breakfast, fritters flambéed with rum, and brown sugar banana bread.


Bahamian Banana Bread


Bahamian Banana Bread is made with local bananas that have already begun to go rotten. (black skins) They are higher in sugar content.


You will need:



  • 2 cups of mashed Bananas

  • 4 cups of flour

  • 1 cup of sugar

  • 1 cup of vegetable oil

  • 1 tsp of baking powder

  • 1 tsp of baking soda

  • 2 eggs



DIRECTIONS:



  1. Preheat oven 350 degrees.

  2. Grease two loaf pans.

  3. Peal and mash local bananas and place into mixing bowl.

  4. Then add sugar and oil. Blend together.

  5. In a separate mixing bowl combine flour, baking powder and baking soda together.

  6. Slowly add the flour mixture to the banana mixture while blending with an electric mixer.

  7. Add the eggs.

  8. Pour into the two greased loaf pans to equal heights.

  9. Place in oven for approximately 45 minutes to an hour.
